About The Charred Onion

The Charred Onion is the expression of my passion for outdoor cooking. Over the years of feeding friends and family, I have developed my recipes to compliment the flavors of nature. All of my rubs, sauces, and flavorings are created in my own kitchen. I am now excited to share my passion with even more people by cooking for you.
We currently offer a variety of traditional BBQ meats as well as side dishes. We can provide pick up or delivery service for you events such as church gatherings, reunions, company parties, or weddings. We also occasionally offer family sized portions for pick up. Who Am I?
My name is Jim Williams, and I have always loved the outdoors. Having lived most of my life in the western states, many of my favorite memories include outdoor adventures. Whether it was the coast of Northern California, the forests of Western Washington, or the mountains and canyonlands of Utah, all I needed to be happy was some open space and time to roam.
My cooking journey has been that of a self-taught enthusiast. It began when my sisters bought me my first cast iron Dutch oven for Christmas. Having enjoyed using it, I set a goal to learn and master all forms of outdoor cooking. I am now experienced in cooking over open fire, Dutch oven, grilling, smoking, BBQ, wood fired oven, and even my little backpacking stove at the top of the mountains. I am constantly looking for new ways to cook outdoors.


I have had the pleasure of competing in outdoor cooking competitions for several years now. I have competed and placed in chili cookoffs, Dutch oven cookoffs, Grilling competitions and BBQ competitions. I first entered the competition world just to see how good I was. I finished high enough to be encouraged, yet low enough to be humbled. I won't claim to be the greatest competitor of all time, but over the years, I have placed in many and have won a few. I have even qualified to compete in a few World Championships. The greatest win, however, was all of the friends I have made around country and having my dad at my side.
For me, competing was never about beating other people, it was about becoming the best I could be. I found that competition pushed me to learn more and develop my style. A lot of my rub and sauce recipes were developed for the purpose of competition, as my philosophy was that I wanted my entry to represent me. From flavor to finish, it had to be my own.

One of the things I have enjoyed the most in my journey is the opportunity to teach others the skills needed to help them develop their passion for outdoor cooking. A major goal of this website is to offer training and advice to you, so that you can build your confidence in outdoor cooking. This will include information on the different types of cooking and equipment used, tips and tricks for managing temperatures, and recipes that can be successfully cooked outdoors.
Though some recipes may be of my own creation, most are commonly available recipes that I have tweaked to my own tastes or adapted to be more compatible with outdoor cooking techniques.
