Event Catering Menu

Select from these options for your event menu. A common option is to select 1-2 meats and 2-3 sides, but we can work up a combination that works for you. If there is something you want, but it is not listed on the menu, let us know, and we will see if we can create a custom item for you.



Meats

Meats are all cooked on smokers using hardwood. Most of the time, I am using a combination of oak and either hickory or pecan.




Brisket

Slow smoked beef brisket, served sliced. Priced per pound. Allergens: no known common allergens

Slow smoked pork shoulder, served shredded. Great by itself, but even better as a sandwich with coleslaw, pickles, and sauce. Priced per pound. Allergens: No know common allergens.

Ribs

Slow smoked Saint Louis cut pork ribs. I recommend ordering them "dry", meaning sauce is not put on during cooking. That allows your guests to choose if they want sauce, and which sauce they prefer. Priced per rack Allergens: No known common allergens

Turkey Breast

Sausage Link

This is as smoked Mild Italian pork sausage link. I have found that this has the broadest appeal to a variety of eaters. Served as a full link or sliced. Priced per pound. Each link is approximately 1/4 pound. Allergens: No known common allergens

Side Dishes

I have prepared side dishes that pair well with traditional BBQ. Priced by the half-sized pan. Larger orders may be delivered in full sized pans for more convenience in delivery and serving. Generally, a half pan will serve 15-20 people. I usually use 18 for calculations, then adjust up or down based on size of menu and dynamics of the guests.

Homemade Sauces

Those who have had my BBQ, generally rave about the sauces. All of my sauces are freshly made, so they don't have any chemicals or preservatives getting in the way of their pure goodness. Recommended portions:1-1 1/2 oz per person. Smaller quantities are sold in 12 oz squeeze bottles, easy for serving. Contact me if you need larger quantities without a bunch of bottles.




Peach BBQ Sauce

My most popular sauce: this is a sweet sauce with a touch of peach. It pairs well with just about anything. Priced per 12 oz squeeze bottle. Allergens: Fish (Worcestershire sauce which contains anchovies)

Liquid Gold - Mustard based BBQ Sauce

Inspired by the South Carolian style sauce, this has the tangy flavor from mustard and vinegar, balanced with a little sweetness of brown sugar and honey.
